Recipe: Cucumber & Heirloom Tomato Salad


I managed to find heirloom tomatoes this week at the grocery store - and while I paid a ridiculous amount for them, this salad 100% made it worth it. It's a quick, healthy lunch that can be turned into a lot of things. I often put it in a pita with some hummus and baked garlic herb chickpeas, or top off a nice slice of sourdough with it.


Although I've used heirloom tomatoes here, any kind of tomatoes will work - if I can't get my hands on some heirloom tomatoes, I usually reach for grape or cherry tomatoes. I prefer red onion in this because it lends a sharpness and color that's generally muted with other onions. Other than that, it's a flexible recipe that can be thrown together in 10 minutes!


 

Recipe:


For the salad -

1 large cucumber

1 pound of cherry tomatoes or 2-3 heirloom tomatoes

1 red onion


For the dressing -

2 tbsp extra virgin olive oil

2 tbsp vinegar - I used white, Modena vinegar here, but red wine vinegar goes well

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper, to taste


1. Cut cucumber, tomatoes, and onions into large chunks.

2. Whisk together the olive oil, vinegar, dried oregano, and thyme.

3. Add salt and pepper to the dressing, and toss with the vegetables


Serve with fresh, crusty bread or in a pita with hummus and chickpeas/falafel!
